Apple & Egg Breakfast Muffins

Description

Ingredients

  • 2 eggs
  • 1 apple, grated
  • 1/2 cup oats
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 tbsp honey or maple syrup
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk eggs, then add grated apple, oats, cinnamon, baking powder, honey, and yogurt. Mix well.
  3. Pour batter into a muffin tin lined with paper cups.
  4. Bake for 20 minutes or until golden brown.
