Ingredients

2 cups Gruyère cheese, shredded
2 cups Emmentaler cheese, shredded
1 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
1 tablespoon cornstarch
1 clove garlic, halved
1 tablespoon kirsch (optional, for traditional Swiss flavor)
½ teaspoon nutmeg
¼ teaspoon black pepper


Instructions

1️⃣ Prepare the Fondue Pot

  • Rub the inside of a fondue pot with the cut garlic clove to infuse flavor.
  • Pour the white wine into the pot and heat over medium-low heat until warm (but not boiling).

2️⃣ Melt the Cheese

  • Gradually add the shredded cheese, stirring in a figure-eight motion until melted and smooth.

3️⃣ Thicken the Mixture

  • In a small bowl, mix cornstarch with kirsch (or a tablespoon of water if not using kirsch).
  • Stir the mixture into the fondue to prevent clumping and ensure a silky texture.

4️⃣ Season & Serve

  • Add nutmeg and black pepper for extra depth of flavor.
  • Lower the heat and keep warm while serving.
